Pasta salad in a bag
Oh, I know it's not soup. But it's summer and sometimes a girl's gotta eat cold carbs. You want
soup? Then invite me over for gazpacho. Meanwhile, eat this.
1 pound funky macaroni
1 chopped cuke
1 celery heart, chopped
1 big vidalia, chopped
1 box of chopped pomi tomatoes, drained
1 can of rinsed and drained black beans
1 can of rinsed and drained white beans
1 bag of frozen baby peas
1/2 big bottle of wishbone balsamic vinaigrette
2 huge handfuls of chopped herbs from the garden, including marjoram, thyme, oregano, and tarragon
maybe 1/2 cup of fresh basil chiffonade
1/2 container shredded parmigiana cheese
2 pounds of fresh cooked large shrimp (you could sub roasted chicken, of course).
Make it, shake it, chill it, add black pepper. A Hefty One-Zip jumbo bag works best. Shake it throughout the day. Serve in
big-ass bowls. It makes a ton. Easy enough to adjust, and it's pretty.
